Sunflowers have various beneficial uses. They are a great source of vitamin E, an antioxidant that keeps your eyes and skin in good health alongside your immune system. Besides, sunflowers contain vitamins A and B, protein, iron, calcium, and nitrogen. Sunflowers are also a great source of lecithin. Lecithin is a word that originated from the Greek word liquithos, which refers to egg yolk. It was discovered in 1805 by a French scientist known as Maurice Gobley. Lecithin was used for treating live ailments, hypercholesterolemia, and neurologic diseases. That was in the past, but today it is used in the food industry. Sunflower lecithin comes from sunflower oil. The oil is squeezed from the seeds, then cleaned and mixed with an alcohol chemical referred to as phosphatidylcholine that is extracted from plant cells. The mixture is put in tanks and stirred for almost 48 hours. It is heated to 90 degrees Celsius so that all the alcohol evaporates.

The lecithin is then filtered and dried. The outcome is a yellow-brownish powder packaged for you to use. Lecithin is used for its emulsifying properties in the food pharmaceutical and cosmetic industries.
